Pasta!
When you think of Italy, you think pizza, pasta and gelato! I have tempted you with my gelato tasting, shared a bit about pizza but it’s time to tell you about some of the best pasta dishes ever. Right now its a toss up between a dish of ravioli and my first taste of “palia e fieno” .
First the ravioli. It was just a serving of 5 homemade ravioli. The presentation was simple but sublime! Ravioli filled with ricotta, egg, cheese and herbs finished with a light butter sauce, a few halved cherry tomatoes and a sprinkle of shaved parmesan. With a glass of chianti, how can you beat it?
Ah, maybe with a bowl of palia e fieno. This classic recipe (which I had never heard of) combines yellow egg fettucine and green spinach fettucine to create a dish that resembles a pile of “hay and straw”. The version I tried was in a rich cheesy sauce of ricotta and parmesan cooked with tomatoes and basil.
